 "Ramen" is now spreading all over the world across the sea. Although such "ramen" is used by many people in Japan, it is recognized as Chinese food, while some overseas and some Japanese people recognize it as Japanese food.

 This is because "Ramen", which originally originated in China, has evolved uniquely in Japan, and as a result, it has become similar to and different from the original "Ramen". Due to the difference in individual perceptions of "ramen" and "ramen," it has come to be called the cuisine of both Japan and China.

 "Ramen" born from Chinese noodle dishes and Japanese food culture can create endless recipes by combining five elements such as noodles, dashi, sauce, ingredients, and fat / oil. Another attraction is the "local ramen" that reflects the different climates, climates, and food cultures of various parts of Japan.

 

 There is a record that Chinese noodles, which are the roots of "ramen", were already eaten in Japan as "Kei-obi noodles" made with almost the same recipe as modern ramen noodles at the time of the 15th century, which was the heyday of the Muromachi Shogunate. .. However, it was not as popular as it is today until it was widely loved by the common people. It will not be widespread in earnest after 1859, when many foreigners moved to Japan and the seclusion that foreign food culture began to flow in was lifted and the port opened. Then, in 1910, the first ramen shop that fused Chinese noodle dishes and Japanese food culture was finally born. That is the "Kuraiken" that opened in Asakusa, Tokyo in 1910.

 

 After the Great Kanto Earthquake that occurred in 1923, the number of "stalls" that can be easily started will increase, and ramen shops will be scattered all over the country. When World War II began in 1939, many ramen shops were forced to close, but after the war, the number of stalls increased again, and ramen became popular nationwide.

 As it gradually spread in this way, many unique "ramen" were born and loved by people by the ingenuity of each person's development and the reflection of the characteristics of each region.
